I’m Adam Cenaiko, and I’m the owner of ADAM BAKES.
Very recently, I left my position as the executive Pastry Chef at the historic Fairmont Château Laurier to pursue my own business. After recipe testing for months, I’ve come up with the perfect lineup of fine pastry I’m focusing on cannelés and other pastries unique to Ottawa that require special skills or special moulds.
But I didn’t start out there. I began at a small family-owned restaurant in Saskatoon, Saskatchewan (somewhere in the middle of Canada) washing dishes and working my way up the culinary ladder. After marrying my beautiful wife Anne-Marie, we moved to Montreal, Quebec, where I worked in a French bakery making croissants and laminated doughs all day long. Eventually I landed my first Pastry Chef gig at a private dining club in Ottawa, which is the city I now call home.
So, how does that bring me to blogging? I have an immense passion for recipe testing and cookbooks, especially pastry-related ones. I wanted to share some of my personal recipes I’ve gathered along the way, with stories that go with them. After all, it’s the stories attached that separate a good cookbook from a great cookbook.
